This quick and easy Eton Mess recipe is a British classic. With only four ingredients, it’s the perfect Summer no bake dessert. One of the best British dessert recipes, Eton Mess is a tasty mix of strawberries, meringues, whipped cream and sugar.
Eton Mess History
Eton Mess originated at the famous Eton College, Surrey, England. It’s thought that a strawberry, cream and meringue pudding was dropped during a cricket match.
The resulting mess was actually quite a tasty dessert! Eton Mess is still served at the annual Eton College v. Harrow School cricket match. It’s also a really popular British dessert, that requires no special skills to make.

How to Hull A Strawberry
To hull a strawberry quickly, you can also insert a metallic drinking straw into the end of the fruit and push it through. The green stem and leaves will come out when you remove the straw.

Eton Mess Recipe Tips
You need fresh strawberries for this Eton Mess dessert. Hull with a sharp knife to remove the green stem at the top of the strawberries.
To make the strawberries extra tasty, sprinkle them with caster sugar. You can skip this step if keen to save calories.

The next step is to whip the cream. Some people prefer the taste of heavy cream rather than whipped cream.
If you choose to use heavy cream, make sure you’ve got a hand mixer! It will be a lot quicker and easier, even when using whipped cream.
Otherwise, a metal or silicone whisk is fine, it will just take a bit longer. Carry on whisking until soft peaks form.

Next, you’ll need to add the meringues to the whipped cream. We use ready-made meringues as they’re a big time saver.
There’s no real difference in taste between these meringues and ones you make yourself. Crumble the nests roughly with your hands.
The meringue pieces don’t need to be all the same size, just make sure they’re smaller than a thumbnail.

All you need to do after this is to add the chopped strawberries to the mixture, then spoon it into bowls or wine glasses. Top with a halved strawberry and an optional sprig of fresh mint.

There you have it, an ideal no-cook Summer dessert. If you like, you can substitute bananas or raspberries for the strawberries or even mix a few together.

Easy Eton Mess Recipe
A simple no bake dessert that's perfect for Summer entertaining.
Ingredients
- 500 g/ 3 1/2 cups strawberries
- 400 ml/ 1 1/2 cups heavy cream or whipping cream
- 1 1/2 tablespoon caster sugar
- 2 cups ready-made meringues
Instructions
- Quarter and hull strawberries.
- Place in a large bowl and sprinkle on caster sugar. Stir to coat all the berries.
- Whip the cream in a large bowl until stiff peaks form.
- Crush the meringue nests with your fingers and add to the whipped cream.
- Add the chopped strawberries and mix well. Set aside a few strawberries for decoration.
- Spoon the mixture into serving bowls or wine glasses. Top with the remaining strawberries and an optional sprig of mint.
Notes
This dessert is best eaten the same day when the strawberries and mint are at their most fresh.
