Mini Strawberry Shortcakes – Perfect for Picnics

Strawberries are one of the best Summertime treats. They’re healthy yet have a lovely sweet flavor. Mini strawberry shortcakes are easy picnic desserts.

You can also pop these sweet treats in your kids’ lunchboxes. They’ll be the envy of their classmates!

Strawberry Shortcake Crumbs

We recommend using Graham crackers for the strawberry shortcake biscuit base. If you live in the UK, you could use Digestive biscuits instead.

Either option will give the recipe a nice crisp texture. You can make the crumbs by blending with melted butter in a stand or hand mixer. Alternatively, place them in a Ziplock bag and crush with a rolling pin.

Strawberry Shortcake Cream

We recommend using cream cheese and fresh whipped cream for a truly delicious flavor. For the best results, add a few drops of vanilla extract and some cane sugar.

If you’re on a health kick, it’s fine to use reduced fat cream cheese for this recipe. If you’re not watching calories and want an extra rich taste, you can also use heavy cream instead of cream cheese.

Strawberry Shortcake Jars

We used mini Frutta del Prato home preserving jars with screw on lids for these Summer picnic desserts. However, miniature Mason jars are perfect too.

Glass sides showcase the fruit, while the screw top keeps the contents from spilling out. When making this strawberry shortcake recipe, sprinkle a teaspoon of sugar on the chopped strawberries.

Leave to macerate for a few minutes before adding the cream. This will allow the strawberry juices to develop fully.

Can You Refrigerate Strawberry Shortcake?

Once you’ve made these strawberry shortcakes, you should refrigerate them for at least an hour so that they’re nice and cool. This will also allow the flavours to develop further.

It’s then best to eat the shortcakes as soon as you take them out of the refrigerator. The strawberries can go a bit mushy if left for too long in the heat.

If you’re going on a picnic, we recommend putting them in an insulated cooler bag. This will keep these picnic sweets at the right temperature until you’re ready to eat them.

A quick and easy Summer dessert - served in jars so it's perfect for picnics.

Ingredients

  • 1 1/2 cups/225 g fresh sliced strawberries
  • 8 oz/225 g cream cheese
  • 1 cup crushed Graham cracker crumbs
  • 1/2 cup/120 ml whipped cream
  • 4 tablespoons/55 g melted butter
  • 3 teaspoons natural cane sugar or brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Crush the Graham crackers in a mixer or in a Ziplock bag with a rolling pin.
  2. Mix the melted butter, Graham crumbs and 1 teaspoon of sugar together.
  3. Beat the cream cheese until smooth. Add 1 teaspoon of sugar and the vanilla extract and mix until smooth. Add the whipping cream and beat until thickened. Place in the refrigerator.
  4. Wash and chop the strawberries and set two aside. Place the remaining strawberries in a bowl and sprinkle with the last teaspoon of sugar.
  5. Layer Graham crumbs, the cream filling and strawberries in a mason jar. Add a second layer and top with a diced strawberry. Repeat for the second jar and serve.

Notes

You can use digestive biscuits instead of Graham crackers.
