Easy Chocolate Covered No Bake Strawberry Cheesecake

Everyone loves cheesecake and when you combine it with chocolate and strawberries you have a winning combination! This no bake strawberry cheesecake is very easy to make and the whole family will enjoy it.

Origins of Cheesecake

Surprisingly, cheesecake can be traced back all the way to ancient Greece. Cato the Elder was a Roman writer and politician. He documented two cheesecake recipes in 160 BC.

The first cream cheesecake recipe is thought to have been invented in New York City by Arnold Reuben of the Turf Restaurant.

What is Cheesecake Made of?

A classic cheesecake contains soft cheese, sugar and eggs. The cream cheese is ideally Italian – mascarpone or ricotta cheese are perfect. Mascarpone works particularly well for unbaked cheesecakes, due to its high fat content.

The base is made from crushed Graham cracker crumbs or digestive biscuits. If you don’t have either of these to hand, you can also use Oreo cookies, ginger snaps or Arnott’s Marie biscuits.

How to Make a No Bake Strawberry Cheesecake

You can either crush the crackers or biscuits in a ziploc vacuum bag with a rolling pin, or use a blender. Then combine the mixture with unsalted butter, either at room temperature or melted.

It’s best to use fresh strawberries if you can for this cheesecake recipe. However, frozen fruit is an acceptable alternative in Winter.

Once you’ve chopped the strawberries in half, remove the green stalk from the top. We leave the stalk on a few strawberries that will be used for the cheesecake topping, but if you prefer you can remove it from all of them.

The next step is to line the base of a lightly greased 9 inch springform cake tin with the biscuit mixture. Press down on the mixture with the back of a spoon. You then place chopped strawberries round the sides.

Next you need to beat the whipped cream and mascarpone cheese with some vanilla extract. The vanilla is optional but we find that it adds a pleasing sweetness to this strawberry cheesecake.

Combine the cream with the fresh strawberries and mix them together.

You can then spoon this mixture into the springform pan and smooth the top with a spatula or knife. Place the strawberry cheesecake mix uncovered in the refrigerator for an hour.

After this, prepare the chocolate ganache. Heat the heavy cream in a microwave in a few short bursts of 30 seconds.

Don’t let the cream bubble over. Allow the hot cream to stand for 5 minutes before combining it with the chocolate chips.

Then pour the cream over the chocolate chips and stir until completely melted. Spoon the ganache mixture over the cheesecake and smooth it with a spatula.

Allow the chocolate cheesecake to cool for at least 30 minutes more in the refrigerator. Remove the springform sides of the pan and decorate with the remaining unhulled strawberries.

We like to add some shop-bought white chocolate curls as a topping. As an alternative, you could drizzle some melted chocolate over the strawberries.

Ingredients

  • 3 cups (380 g) fresh strawberries
  • 1 cup dark chocolate chips
  • 1/2 cup (115 g) heavy cream
  • 1/2 cup (120 ml) whipping cream
  • 1 pack (8 oz) mascarpone cheese
  • 4 Graham's crackers
  • 4 tablespoons unsalted butter
  • 1/2 tablespoon vanilla extract
  • White chocolate curls (optional)

Instructions

  1. Take the unsalted butter out of the refrigerator.
  2. Chop the strawberries in half. Set 4 strawberries aside for the cheesecake topping, leaving the green stalk on. Hull all the remaining strawberries, removing the green stalk.
  3. Crush the Graham crackers or digestive biscuits in a zip-lock bag with a rolling pin, or blend them in a food processor until you get fine crumbs.
  4. Mix the crushed crackers with 4 tablespoons of room temperature butter until well combined.
  5. Line the bottom of a springform pan with the biscuit crumb mixture.
  6. Place chopped strawberries vertically round the side of the pan.
  7. Beat the mascarpone cheese together with the whipping cream in a large bowl. Add the hulled strawberries to the mix. Then add the vanilla extract.
  8. Spoon the mixture into the springform pan and allow to chill uncovered for at least 1 hour in the refrigerator.
  9. Prepare the chocolate ganache by heating the heavy cream in a microwave on short bursts for 30 seconds until hot. Pour heavy cream over he chocolate chips and leave for five minutes. Then stir the chocolate and cream until thoroughly mixed in.
  10. Pour the chocolate ganache over the cheese mixture and smooth with a spatula.
  11. Allow to cool uncovered for at least 30 minutes in the refrigerator. Remove the sides of the springform pan.
  12. Top with the remaining strawberries and optional white chocolate curls.

Notes

You can store leftovers in the fridge for up to 2 days.
